My Life Changing Sassy Date & Coconut Energy Balls

I usually have the willpower the size of a mosquito. But when I put my mind to something, do my research and discover lots of health benefits, I can fully commit to a resolution. Ok, so my cupboard may be stashed with some reduced mulled wine (thanks Waitrose) but the sentiment is there when it comes to food… I’m trying to be more healthy.

Rather than ‘going on a diet’ I intend to ‘improve my diet’. That way I’m less likely to feel like I’m depriving myself and more likely to fill myself up on the good stuff (clever huh?). With a little one in tow and businesses to consider I’m always pressed for time so anything I can make in batch, have on the go and even freeze is a real win for me. Even better if it’s baby friendly and fussy eating husband friendly.

So for all of you who crave the same, here are my date and coconut energy balls. I’ve designed them to keep you fuller for longer, to have as a snack or an accompaniment to breakfast. They’re great as desserts too. This recipe makes about 20-25 balls and feel free to amend the measurements as you see fit.

Ingredients

1 + 1/2 cups chopped dates

1/2 cup sultanas

3/4 cup crushed almonds

1/3 cup desiccated coconut + left overs to roll the balls in

1/5 or 1/4 cup of powder goodness (protein powder works well but I use Nature’s Heart Omega 3 Superpowder from Waitrose)

1 tbsp Coconut Oil (Almond oil or nut butter also works well)

Method:

Blitz everything together in a food processor (or use a hand blender). You may find they’re a little wet but that’s because the oil has melted. Great for rolling in the coconut afterwards and once refrigerated they’ll go super hard.

Dates are high in nutrients and antioxidants, high in fibre and good for brain health and reducing anxiety. Obviously as with any dried fruit, don’t go overboard because they can be higher in sugar than their fresh fruit brothers and sisters. Enjoy!
